Mangetout/Sugar Pea

 

For a long time, the market has known green sugar peas/snow peas. The product (which by the way is known in French as Mangetout – a word which means ‘eat everything‘) is basically a flat podded pea. Them that like it eat it whole, though in Africa some cooks chop it into small pieces. It can be served raw, lightly steamed, stir fried or boiled. Light cooking is however recommended as is with every vegetable.

The market likes it less seeded. Of course different markets prefer it packed differently, the same way different markets prefer different pod sizes.

Kept under refrigeration, the product can about three last weeks before it starts to deform. In ambient temperature, we have observed that a week is enough to start observing paleness, discolorations, pitting and several other deformations.

The product is said to be in season from June to September. But at Elmas Greens, this is a year round product.
